Production is gentle: the milk is boiled for about an hour to remove fat and for pasteurization, then a small amount of salt and lime juice (about 0.01% in total) is added to curdle it. The cheese is pressed for 2–3 days to remove moisture, then cut into pieces and dried in a smokehouse for 20–30 days, ensuring the typical hardness and aroma.
