Production follows a traditional process: milk from free-range Himalayan cows is boiled to skim and pasteurize it, then curdled with a small amount of salt and lime juice (0.01%), pressed for 2–3 days, and then the sticks are dried for 20–30 days to achieve their typical hardness.
